Meal Planning & Recipes Week 5

Good Morning !!! This weeks meal plan seems super full (its going to be this way all summer too). Springbreak is this week. Its going to be a busy week, Its supposed to be in the 60s-70s this week so we will definitly be grilling a FEW times this week 🙂

Friday is the annual FISH fry at  Monroe Fire Department.( and let let tell you its totally worth going out for dinner. The fish fry benefits the  training center, we go every year). If you live close to Monroe ,WI you definitly should check this out.


And Sunday is EASTER so we definitly will be having Easter dinner here.

Sweet Potatoe Souffle - Fireside Dinner Theatre Recipe

  • 4 lbs peeled and steamed sweet potatoes
  • 2/3 c melted butter
  • 1 1/4 c evaporated milk
  • 1/2 tsp salt
  • 7 eggs
  • 2 c sugar

Pecan Topping

  • 1/4 c flour
  • 1/2 c brown sugar
  • 2 Tbsp melted butter
  • 1/4 c pecan pieces


  1. Place sweet potatoes in large mixing bowl, whip until smooth

  2. Add butter, eggs and evaporated milk, mix throughly, add sugar and salt. Mix throughly again. 

  3. Put into a greased 9x13 pan and top with pecan topping.

  4. To make pecan topping, mix flour, butter and brown sugar until its the consistency of sand. Add pecan pieces, mix throughly. 

  5. Bake at 300 for 1 1/2 hours
