Meal Planning & Recipes – Week 4

Last week was an absolutely BUSY week. Meal plan was a HUGE help, and since life had it’s own agenda, there are a few of last weeks dinners that got pushed back on the menu. Saturday was a busy day as well, kiddos and I had a birthday party, and dad had Fire Dept training. So by time we all got home I didnt have desire to cook much, we ended up meeting up with his brother and his girlfriend for Olive Garden(YES Olive Garden is my favorite restuarant EVER….. have you had their donut type desserts OH MY GRACIOUS!!!! its like a square bite sized funnel cake dipped in chocolate…. and yes I totally needed my fat pants on as soon as I got home LOL)

 

This week you may notice a little difference during lunch time, I started babysitting so instead of making a whole new menu I just incorporated their lunch into the weekly plan.

Chicken and Dumplings Crockpot

Recipe Adapted from Recipe in Church Cookbook for Chicken Soup to Cure a Cold 

Course Main Course
Cuisine American

Ingredients

  • 3 Boneless Skinless Chicken Breasts Cut into bite size pieces
  • 1/2 small Onion Diced
  • 1/2 tsp Garlic Salt
  • 14 oz Chicken Broth
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 Tbsp Parsley Flakes
  • 1 Celery Stalk Dice into small pieces
  • 1 lg Carrot Cut into small peices. Or use 1/2 c Matchstick Carrots cut in half
  • 1/4 tsp Cheyenne Pepper
  • 2 C Water

Dumplings

  • 2 c Flour
  • 1 1/2 tsp Salt
  • 1 Tbsp Baking Powder
  • 2 Tbsp Vegatable Oil
  • 1 c Warm Water

Instructions

  1. Boil Chicken Breasts until juices run clear. Remove from water and dice into bite size pieces

  2. Add Chicken to Crock Pot, add rest of ingredients and stir.

  3. Cook on low 6-8 hours. 

Dumplings

  1. Combine all ingredients, mix until smooth. Add a bit more water until dumplings are soft and not at all dry. 

Remove Crock Pot Mixture into a Large Pot

  1. Bring Broth to a boil , add dumplings by the spoonful. Reduce heat and cook dumplings 4-5 minutes(do in batches if you are using a small pan) 



  2. The broth from crock pot will thicken when making dumplings  and thats ok. 

    Once dumplings are cooked through, Spoon out Dumplings and Chicken mixture into bowls and Serve!!

Recipe Notes

This Recipe is adapted from a recipe in Church cookbook for soup. I decided to tweek it a bit and make Chicken and Dumplings out of it .

We have this OFTEN during the winter, and I also have made it for others when they aren't feeling so hot and so far everyone loves it.
