Meal Planning & Recipes Week 3

Hello, I sincerely apologize for it taking so long to get this meal plan up. This week has been crazy busy.

This weeks meal plan has a  little variety. Papa Murphys was a hey I got a FREE pizza coupon, so Im  going to make dinner super easy Monday night.  Going to try out the new air fryer this weekend so wanted to make sure the meal plan features an awesome recipe that can  be made in the air fryer.



Recipes for This Week 

French Toast MuffinsI found this recipe on thebakerlady awhile ago LOVE these muffins)

Sweet and Spicy Chicken  


Sweet & Spicy Chicken


  • 1 lb Chicken Breasts Cut Into cubes
  • 3 Tbsp Watkins Taco Seasoning
  • 1 Tbsp Vegetable Oil
  • 1 11 oz Jar` Salsa
  • 1/2 cup Peach Preserves
  • Rice
  • Water


  1. Place chicken in large ziploc bag, add taco seasoning and shake to coat chicken. 

  2. Add oil to skillet, brown chicken in skillet until juices run clear 

  3. Combine Salsa and Peach preserves, stir into skillet. 

  4. Bring to a boil. Reduce heat and cover, simmer 2-3 minutes. 

  5. While sauce is thickening. In seperate pain make rice according to box instructions. 

  6. Once rice is done, serve chicken and salsa over rice 



Sweet & Sour Chicken Over Rice (adapted from

*** Airfryer wasnt here last week so going to make this recipe, and instead of deep frying chicken Im going to use airfryer.I will definitly do a review of it as soon as I use it 🙂  ****

Ingredients: 2 Chicken breasts sliced into 1-2″ peices,

Chicken Batter: 1/4 c Flour, 1/4 c cornstarch, 1/4tsp salt, 1/4 tspsugar, and 1/2c water combine all ingredients until smooth.

Instructions: Preheat Deep Dryer to 375, coat chicken in batter mixture and add to deep fryer, cook until golden brown, remove onto a paper towel. Once all chicken is done, dip into sweet and sour sauce or cover chicken with sauce ( I am using the sauce I bought last week at Aldi) and serve with rice.

Spaghetti and Homemade Meat Balls  

This was supposed to be last week, but something came up so  changed it to this weeks dinner for Sunday.

Meatballs Ingredients: 1.5 lb Ground Beef, 1/4c parmesan cheese, 1c crushed saltine crackers, 1 egg, 1/4 tsp garlic salt. Directions: Mix all ingredients and shape into balls , Bake @ 325 for 10-15 minutes.

Sauce Ingredients: 1 15oz Can Tomato Sauce, 1/4 c water, 1/4 c parmesan cheese, 1/4 tsp italian seasoning or oregano( I just sprinkle some garlic salt in place of the italian seasoning or oregano). Heat in sauce pan, stir throughly. (**I double the above recipe when making spaghetti**)

Directions: Add Meat balls to crock pot, pour sauce over meat balls. Keep on Keep Warm until ready to serve with Spaghetti or you can eat these as an appetizer as well.

Cook Spaghetti as directed on package. while this is cooking bake Garlic Bread as directed on package. Drain spaghetti, Serve with Meat balls and Sauce and Garlic Bread.
