Last Week, I featured my monthly shopping trip as well, a weeks worth of meal plans and featured recipes.
This week I am doing this a bit differently. Of course the meal plan, recipes and this week a little baking in the mix, I have been wanting some of my Grandma Carolyn’s Banana Bread so I’m going to make a few loafs of bread and most likely freeze a couple of them. This week is also a super busy week at our house, Wednesday(which they usually are a quick dinner rush kind of night) Thursday, is parent teacher conferences, Friday theres no school, and Saturday is the Annual Sportsman’s Banquet at Fire Department(so busy and go go go kind of day from morning until night)
I used to buy Pancake and Waffle Mix and Sams Club in a big bag and use that to make waffles and pancakes (plus extra to freeze for a super quick hot breakfast on school days), and then Bisquick to make dumplings etc. I was searching Pinterest the other day and came across a Homemade Baking Mix Recipe……. Super excited I wont be spending extra money on buying both when I can make it myself way cheaper 🙂
Recipes For This Week
Homemade Baking Mix (adapted from : HappyMoneySaver.com )
Ingredients: 5 c Flour, 1/4 c Baking Powder, 2 tsp Salt, 1 c Butter or Butter flavored Crisco
Directions: In Mixer(I use a kichenaid), or food processor, blend above ingredients until powedery. Store in an air tight container. If you use butter store mix in the fridge or freezer so it doesnt go bad. If using Crisco store in a cool, dry place(I put ours in the pantry).
This week I will be using this to make Waffles on Tuesday morning and Pancakes on Friday morning. There is recipes for Pancakes and Waffles in the adapted from link)
CrockPot Mississippi Pot Roast (adapted from thecountrycook.com)
Ingredients: 3lb Chuck Roast, 2 Tbsp Olive Oil, Sprinke of Salt & Pepper, 1 Packet Stone Mill Essentials Racnh Dressing Mix, 1 Packet Chef’s Cubbard Onion Soup Mix, 1/2 c Salted butter, 8-10 Pepperonchinis
Directions: Heat a large frying pan, add oil to hot pan. Dry off meat with a paper towel, sprinkle a little salt & pepper on meat. Add roast to pan, brown on each side (2-3 mins each side). Add Roast to CrockPot. Add Ranch packet, Onion Soup Packet, top with butter stick then pepperoncinis around roast(I add a few to the top as well) Cook on low for 8 hours. Before serving shred the meat(take out chunks of fat). Serve on Buns or over Mashed Potatoes
*You can skip the browning step if you are in a hurry, but it does make the roast taste better if you brown it first
Sweet & Sour Chicken Over Rice (adapted from tornadoughalli.com)
Ingredients: 2 Chicken breasts sliced into 1-2″ peices,
Chicken Batter: 1/4 c Flour, 1/4 c cornstarch, 1/4tsp salt, 1/4 tspsugar, and 1/2c water combine all ingredients until smooth.
Instructions: Preheat Deep Dryer to 375, coat chicken in batter mixture and add to deep fryer, cook until golden brown, remove onto a paper towel. Once all chicken is done, dip into sweet and sour sauce or cover chicken with sauce ( I am using the sauce I bought last week at Aldi) and serve with rice.

Spaghetti and Homemade Meat Balls
Meatballs Ingredients: 1.5 lb Ground Beef, 1/4c parmesan cheese, 1c crushed saltine crackers, 1 egg, 1/4 tsp garlic salt. Directions: Mix all ingredients and shape into balls , Bake @ 325 for 10-15 minutes.
Sauce Ingredients: 1 15oz Can Tomato Sauce, 1/4 c water, 1/4 c parmesan cheese, 1/4 tsp italian seasoning or oregano( I just sprinkle some garlic salt in place of the italian seasoning or oregano). Heat in sauce pan, stir throughly. (**I double the above recipe when making spaghetti**)
Directions: Add Meat balls to crock pot, pour sauce over meat balls. Keep on Keep Warm until ready to serve with Spaghetti or you can eat these as an appetizer as well.
Cook Spaghetti as directed on package. while this is cooking bake Garlic Bread as directed on package. Drain spaghetti, Serve with Meat balls and Sauce and Garlic Bread.
Taco Ring(adapted from Pillsbury.com)
Ingredients: 1lb ground beef, 1 packet Watkins Taco Seasoning, 1/2 c water, 1 c shredded cheddar cheese, 2 Cans of Crescent Rolls( I use Aldi Brand)
Directions: Preheat oven to 375, in skillet brown beef, add taco seasoning and 1/2 c water, simmer until sauce thickens. Unroll both cans of crescents rolls onto a large cookie sheet(or a pizza pan works great too), place each triangle into a circle shape until you have a ring that looks like a sun with a 5″ circle in center. The dough will overlap and thats ok. Add Beef, top with cheddar, fold outsides of crescent rolls in and press down so they create a “bowl shape” in center of ring. Bake for 20-25 minutes until the roll is golden brown. Cool 5 minutues before cutting. You can add lettuce, tomatoes, olives, salsa etc to the center OR to make this dish even tastier, crush some Ranch Toritalla Chips (or Cooler Ranch Dorito’s) in a plastic baggie, before baking lightly brush some water on the top of the rolls and sprinkle crushed chips on the top. Bake as Directed
Crockpot Philly Cheesesteak Sloppy Joes(adpapted from spendwithpennies.com)
Ingredients: 1lb ground beef, sprinkle of garlic salt, pepper to taste, 1 medium onion-slivered, 1 green pepper diced, 1 small can sliced mushrooms, 2Tbsp flour, 1 can beef broth, 1 tsp Worchestershire sauce, sliced Mozzarella or Provolone Cheese.
Directions: Brown and drain beef, add beef, sprinkle of garlic salt and pepper to taste, onions, green peppers and mushrooms to crockpot. Add flour and mix all together. Add can beef broth and worchestershire sauce. Cook on low 4-5 hours. Serve on Buns or sub rolls. Add Cheese and Enjoy!
